We went to Cancun over Memorial Day weekend (May 21-28) for our "wedding pre-niversary." If you don't know what a pre-niversary is, it is the anniversary BEFORE something happens. Yes, the word was invented by Nicole, so if you use it, please give it due and proper credit.
It was a great trip! We stayed at the Ritz Carlton and it was beautiful. I have never seen clearer water or better weather! While we were there, we attended a cooking class, saw a reenactment of a Mayan rain dance, went snorkeling, and visited Chichen Itza, in the middle of the Yucatan. And of course, ate at some great restaurants. Nicole enjoyed it so much, she wanted to stay an extra four days....er...we do have a wedding to plan, Nicole...

Actually, I guess it was really more of a "pre-neymoon", but you get the idea. ;) I still don't forgive you, Shep, for making us leave!! It was definitely the BEST vacation ever! :)
